Will Studd and Calendar Cheese

Cheese has been Will Studd’s life work - its history, its production, its regions, its tastes, and its eccentricities. It is a work in progress that now spans nearly thirty years. Starting in London in 1976 Will began importing a selection of French cheeses from the Rungis wholesale market in Paris for the seven delicatessen outlets that he had established in Central London. In 1983, he turned his passion for cheese into a business when he began importing French cheese into Australia.
With his extensive knowledge and promotional skills, he has become integral to the development of the Australian cheese industry since moving here in the early 1980s.
However, it is his promotion of French cheese within Australia and his relentless fight to allow the importation of cheese made from unpasteurised milk, in particular Roquefort into Australia which earned him the Ordre Merite du Agricole in 2002, awarded by the French government.
Will was also awarded the title of Maitre Fromager and Ambassadeur of the prestigious Guilde des Fromagers based in Paris in 2000. Will’s book, Chalk and Cheese was awarded Best Cheese Book in the World Cook Book awards in Periguex France on 1999.A founding partner in the Calendar Cheese Company, Will has been a tireless campaigner for the right to make and sell raw milk cheese.
