Careful hands deliver Pannettone
Ernesto Perbellini and his two brothers, who are well into their 60’s, make these renowned Pannettone and Pandoro on the outskirts of Verona in the northern Italian region of Veneto. They are fifth generation pastry cooks specializing on pasticerria.
Pannettone is a typical sweet bread of Milan, with nuts and fruit, usually prepared and enjoyed for Christmas and New Year around Italy.
Pandoro translates as “golden bread” and is the traditional Christmas cake of Verona. Baked in a star shape, it is light and buttery and covered with a light dusting of icing sugar.
The Perbellini Panettone and Pandoro are baked at the end of October as the cooler weather settles in, the dough is handmade and allowed to leaven naturally, baked, then allowed to cool, then the cake is hand wrapped by the Perbellini Family.
